Cherry Amaretto Cream
½ ounce unflavored gelatin
1 cup cold water
¼ cup sugar
¼ teaspoon salt
30 ounce can tart cherry pie filling
2 Tablespoons lemon juice
¼ teaspoon almond flavor
2 cups heavy cream, whipped
2 Tablespoons Amaretto
Sprinkle gelatin in cold water on a saucepan to soften. Place over low heat, stirring constantly until gelatin is dissolved. Chop fine 2 cups of tart cherry pie filling. Add gelatin, sugar, salt, lemon juice and almond flavor to chopped cherries. Chill until mixture begins to thicken slightly. Fold in whipped cream and pour into a 2 quart mold. Chill until firm. Add the Amaretto to remaining cherries and heat on low heat until warm. Cool to room temperature. When ready to serve, unmold on serving plate. Pour cool cherry-Amaretto sauce on top. (Optional: slivered almonds as a garnish.)
