Cherry Nut Bread

 
 

2 cups flour

1 cup + 2 Tbsp sugar

1 ½ tsp baking powder

¼ cup shortening

1 egg

½ cup orange juice

1 Tbsp grated orange peel

2 Tbsp cherry juice or warm water

1 cup tart cherries, well drained and coarsely chopped

½ cup chopped nuts

 

Sift together flour, sugar, and baking powder. Cut in shortening; stir in eggs, orange juice and peel, and cherry juice. Fold in cherries and nuts. Pour into greased individual loaf pants (5×2 ½x2 ¼ inch) to make 4 loaves or (3 7/8x 2 ½x1 3/8 inch) for 6 mini loaves. Bake at 350º for 25 to 30 minutes.
