Cranberry Walnut Bars

 
 

½ cup margarine or butter, melted

1 (16-ounce) package cranberry quick bread mix

1 (14-ounce) can sweetened condensed milk

1 ½ cups chopped walnuts

2 cups fresh or frozen cranberries, finely chopped

2 eggs

¼ cup orange juice

2 teaspoons grated orange rind

¼ teaspoon salt

 

Preheat oven to 350º. In a large bowl, combine all ingredients; mix well. Pour into greased and floured 15×10-inch jellyroll pan. Bake 30 to 35 minutes or until golden. Cool. Top with confectioner’s sugar or orange glaze. Cut into bars. Store covered at room temperature.

Orange Glaze

In a small bowl, combine 1 ½ cups confectioner’s sugar, 3 tablespoons orange juice and 2 teaspoons grated orange rind; mix until smooth.
